Spicy Thai Peanut & Cucumber Relish

- ½ cup white vinegar or lemon juice
- 4 tablespoons palm sugar, finely shredded
- 1 teaspoon salt
- ½ cup water
- 4 tablespoons vegetarian oyster sauce
- 1 red chili, chopped fine
- ½ medium cucumber, peeled, or unpeeled if thin-skinned, and thinly sliced
- 1 tablespoon finely chopped fresh coriander
- 3 tablespoons chopped roasted peanuts
Whisk together the vinegar or lemon juice with the sugar, salt and water until the sugar dissolves. Add the vegetarian oyster sauce and the chopped chili.
Serve: layer the cucumber slices in a small bowl, sprinkle with coriander leaves, pour over the sweet-sour sauce, and top with the peanuts.
